Chorizo Sausage Shakshuka

I was recently asked if I would like to sample to try Mr Beak's chorizo sausages. After seeing them in my local supermarket I was keen put them to the test. Using the chorizo variety I set out to make my very first shakshuka. 

Shakshuka actually translates to ' a mixture' in Arabic slang and is a staple in Egyptian, Libyan, Tunisian, Moroccan and Algerian cuisines.


I was happy to discover the Mr Beak's sausage range are MSG & gluten free,contain no artificial colours or flavours and are made using 100% Australian beef, with a meat content of 90%. They are also super convenient, as I can pick up a pack from my local supermarket anytime and don't have to worry about getting to the butchers during the week.

I have always wanted to make a shakshuka and love the combination of flavours and fresh ingredients - not to mention the appeal of the one pot/easy serve. With this recipe I chose not to include the eggs as I actually cant stomach runny eggs at the best of times but especially at the moment as I am pregnant. 

It was just as delicious I assure you.

Chorizo Sausage Shakshuka


ingredients
2 tbs olive oil
1 packet of Mr. Beak’s chorizo sausages
3 garlic cloves, finely chopped
½ red onion, finely diced
1 red capsicum, finely diced
800g fresh truss tomato, finely chopped (alternatively use 2x400g chopped tinned tomatoes)
1 ½ tbs tomato paste
2/3 cup water
2 tsp dried hot chilli flakes
4 free range eggs
100g white goats milk cheese, crumbled
1 tbs fresh flat-leaf parsley, finely chopped
1 loaf of crusty bread to serve



method
1.Preheat the oven to 180Âșc. Heat the olive oil over low to medium heat in an ovenproof dish or skillet on the stove top. Gently brown off the chorizos on each side until light brown, remove from pan and set aside covered.

2. Stir in the garlic and red onion and cook until soft. Add the capsicum, tomatoes, tomato paste, water and chilli flakes, stir well and bring to the boil. Reduce to a simmer and cook for a further 10 minutes until the sauce has slightly reduced. Season with salt and pepper to taste.

3. Turn off the heat and gently place the chorizo sausages on top of the sauce. Place the ovenproof dish in the oven for 10-15 minutes.


4. Remove the dish from the oven, create 4 shallow dips in the tomato sauce and around the sausages. Gently crack the free-range eggs into the dips and crumble the goat’s cheese over. Return to the oven and bake for a further 5 minutes.

5. Remove from the oven, garnish with flat-leaf parsley and enjoy Mr. Beaks Chorizo Sausage Shakshuka with thick slices of crusty bread!

  1. I never knew what shakshuka meant - I always associate it with breakfast in a pan! lol. And you can't beat good quality sausages either. Always worth the investment.
